The January Bon Appétit gathering is all about salad - a refreshing way to kick off our new year, and to kick away from the comfort food that was good for December but now seems a bit too familiar. Salad is an invitation to combine fresh and preserved ingredients to create a whole that is greater than its individual parts.
During the January 16 meeting, we'll each set up in our own kitchen and connect via Zoom. Andy Roosa has volunteered to lead this Bon Appétit session. He will make his favorite salad: Roasted Butternut Squash with Lentils and Feta. He will roast the squash and boil the lentils ahead of time and, then, during the meeting, he will assemble and sample his new, favorite winter salad. You can follow and assemble the lentil and squash salad, or create a salad of your own for display and consumption. If you're not hungry and/or don't want to make a salad, you are welcome to join in and offer encouragement as you watch Andy make his salad!
Remember! Some ingredients for this salad must be cooked ahead of time, so don't dilly dally!
